Amaranth & Bean Burgers Patties

  1. 1/2 cup amaranth
  2. 1 tablespoon pepitas
  3. 2 tablespoons sunflower seeds
  4. 1 1/2 cups water
  5. 3 spring onions
  6. 1 large handful of baby spinach leaves
  7. 1 small handful of fresh herbs of your choice (e.g. mint, basil)
  8. 1 egg or flax egg (1 tablespoon of ground flax seeds mixed to 2 tablespoons water)
  9. 1/2 cup oat (or gluten free) flour
  10. salt and pepper
  11. rice bran oil to shallow fry
