Summer might be officially over but the hot weather continues. I have the perfect recipe for your plant powered BBQ or picnic this weekend. Potato salad is a classic entertaining side dish… problem is, traditionally, it is not even close to being healthy. Potatoes themselves should not be demonised. While they are not a great everyday food potatoes are delicious, satisfying, guaranteed crowd pleaser and great source of vitamin C.

Simple and delicious recipe for vegan Avocado Potato Salad

  1. 6 medium waxy potatoes
  2. 1 avocado
  3. 1 handful fresh mint
  4. 3 spring onions
  5. juice 1 lime
  6. 1 tablespoon extra virgin olive oil
  7. salt and pepper
  8. extra sliced spring onions to garnish
  1. Wash the potatoes (leaving the skins on) and slice into 2cm slices.
  2. Steam the potato slices (using a double saucepan or steamer basket) until just soft (approx. 15min).
  3. Allow the potatoes to cool completely.
  4. Meanwhile mash the avocado using a fork and combine with the finely sliced mint, spring onions, the lime juice, olive oil and salt and pepper.
  5. Gently fold the cooked potatoes through the mashed avocado mixture until well coated.
  6. Top the salad with some extra slices of spring onions and serve.
