I have mentioned before that I often have a bag of carrots handy in the fridge. These are great raw but sometimes I like to use them for a flavourful side dish. These tasty baked carrots make the perfect accompaniment to any veggie lovers dinner or work well as cold left overs on a salad.

Baked Spicy Carrots

  1. 1kg carrots
  2. 1 tablespoon harissa
  3. 2 tablespoons olive oil
  4. 1 teaspoon caraway seeds
  1. Preheat your oven to 180degC.
  2. Peel the carrots and slice in half length-ways.
  3. Combine the sliced carrots with the harissa, oil and caraway seeds in a large baking dish and stir well.
  4. Bake in the moderate oven for 30 minutes or until the carrots are soft.
