Sometimes I get bored of green leafy salads and mix things up with a chopped (grated or sliced) salad. This technique is a great way to create a rainbow on your plate and can be constructed in seconds using your food processor. If you like coleslaw you will love this recipe!
Chopped Salad

Ingredients
- 1/4 savoy cabbage
- 1 fennel bulb
- 1/2 red onion
- 6 carrots
- 1/2 bunch of continental parsley
- 1/4 cup verjuice
- juice of 1 lemon
- 4 tablespoons extra virgin olive oil
- 1/4 teaspoon garlic powder
- salt and pepper
Instructions
- Remove the hard core from the cabbage and fennel and remove the skin from the red onion.
- Using your food processor or a mandolin finely slice the cabbage, fennel and red onion.
- Peel the carrots and remove the tops.
- Change the blade on your food processor, to the grating attachment, and grate the carrots (alternatively use a hand grater).
- Combine all the sliced and grated ingredients in a large bowl with the finely chopped parsley and the remaining ingredients.
- Toss well and set aside for a few minutes for the flavour to intensify before serving.
