Heading out tonight to watch the Eurovision 2012 final with a group of friends at Danika’s house. As I will be cheering for Ireland I am bringing along a favourite Irish dish (with a Megan twist) to share. Go Jedward!

Fennel and Red Cabbage Coleslaw

1 bulb fennel
1/4 red cabbage
1/2 red onion
1 carrot
1/2 orange
1/3 cup herb and garlic aioli or vegenaise
salt and pepper

Shred the fennel, red cabbage and onion into a large bowl using a mandolin slicer set on the finest setting.
Grate the carrot into the same bowl.
Squeeze in the juice from half an orange and add the herb and garlic aioli.
Combine well with tongs and season to taste with salt and pepper.
