This is a really yummy salad the Pomegranates making it very special.
This is a serving just for one so multiply the amounts if you want to make a larger salad.
1 cup Baby Spinach Leaves
1 small Beetroot
Garlic Sprouts for garnish
50g Goats Cheese
Juice of 1/2 Lemon
1 tablespoon Pomegranate Seeds
1 teaspoon Agave Syrup
1 teaspoon Extra Virgin Olive Oil
Lay the chopped salad ingredients decoratively on a plate. Mix the dressing ingredients together in a small bowl and drizzle over the salad just before serving. Garnish with the garlic sprouts.
Interesting anecdote about the amazing Pomegranate:
I have been sailing since I was a baby so this story stuck in my mind. In July 2010 the Plastiki, a yacht made out of 12,500 plastic PET bottles, sailed into Sydney Harbor after sailing more than 8,000 nautical miles and spending 128 days crossing the Pacific from San Francisco. Much of the design of Plastiki was inspired by nature and biomimicry. The boat was built with Pomegranates, eggs and pond-skater bugs all integrated into the design. Read more here.
