This is a really yummy salad the Pomegranates making it very special.
Pomegranate Salad
This is a serving just for one so multiply the amounts if you want to make a larger salad.
1 cup Baby Spinach Leaves
1/2 Avocado
1 small Beetroot
Garlic Sprouts for garnish
50g Goats Cheese
Dressing
Juice of 1/2 Lemon
1 tablespoon Pomegranate Seeds
1 teaspoon Agave Syrup
1 teaspoon Extra Virgin Olive Oil
Lay the chopped salad ingredients decoratively on a plate. Mix the dressing ingredients together in a small bowl and drizzle over the salad just before serving. Garnish with the garlic sprouts.
