As you know I like to cook from scratch and keep things fresh and healthy. Occasionally though, store bought sauces have made it onto our table. James, like half of the world’s population, is a fan of BBQ sauce which contains the colouring ‘caramel’. In the last few weeks there has been alarming reports about the possible carcinogenic properties of this chemical.
Earlier in the month the Australian Food News reported: “US beverage giants Coca-Cola and PepsiCo Inc. are adjusting the formula of their caramel colour following health concerns about the use of the additive 4-methylimidazole (4-MEI). Coca-Cola Co. and PepsiCo Inc. are changing the way they make the caramel colouring as a result of a new California law that requires drinks containing a certain level of carcinogens to display a cancer warning label.”
So like my mother did, and her mother before her… I made it myself at home.
I have started with Tomato Ketchup and will try home made BBQ Sauce next.
Real Tomato Ketchup
1 table spoon coconut oil
2 large red onion
1 tablespoon ground coriander
1 tablespoon Italian mixed herbs
2 tablespoons sweet paprika
2kg sun ripened tomatoes
1/4 cup balsamic vinegar
1 tablespoon raw unprocessed sugar
salt and pepper
Wash and dice the tomatoes.
Finely dice the onions and saute for 5 minutes, over a low heat, with coconut oil in a large pot.
Add the herbs and spices to the mix and stir well for 1 minute.
Add the diced tomatoes, balsamic vinegar, sugar, salt and pepper to the pot and gently bring to the boil.
Reduce the heat to the lowest setting and continue to simmer for 2 hours, stirring frequently.
Use a stick blender to puree the ketchup in the pot.
Poor the hot ketchup into 2 hot sterilized preserving jars and immediately cover.
