Inspired by Arancini but much healthier… my rice balls are veggie packed and made even more delicious with ground walnuts and sesame seeds. Small in size these crunchy on the outside, soft on the inside, tasty morals make great snacks or part of any healthy meal. Veggie rice balls can be made with any type of rice and veggie combination. The combos are ready limitless so take a look at my recipe and try them this way or your way!

  1. 1 tablespoon rice bran oil
  2. 1 leek
  3. 200g cabbage
  4. 6 button mushrooms
  5. 1 cup Arborio (risotto) rice
  6. 2 cups veggie stock
  7. 1/2 cup walnuts
  8. 2 flax eggs (2 tablespoons ground flax seeds + 4 tablespoons filtered water)
  9. 1/2 teaspoon mixed herbs
  10. pinch of garlic granules and onion powder
  11. 2 tablespoons sesame seeds
  12. extra oil for tray and brushing
  1. Cut the leek lengthways and wash between the layers before slicing as thinly as possible.
  2. Also slice the cabbage as thinly as possible using your knife skills or a mandolin slicer.
  3. Dice the mushrooms into a fine dice.
  4. Sauté these diced/sliced veggies with the rice bran oil in a pan, over a medium to low heat, for 20 minutes or until completely soft.
  5. Meanwhile cook the rice.
  6. Wash the rice and add to a medium-large saucepan with the veggie stock.
  7. Bring to the boil, cover with the lid, and reduce the heat to the lowest setting.
  8. Allow to simmer for 15 minutes before turning off the heat and leaving it to stand (with the lid on) for a further 10 minutes.
  9. Pre-heat your oven to 180degC.
  10. Grind the walnuts into a corse meal with your food processor.
  11. Prepare the flax eggs by combining the ground flax seeds with the filtered water in a small bowl.
  12. Combine all the ingredients in the saucepan (with the cooked rice) and stir well with a wooden spoon until everything is evenly mixed.
  13. Grease and line a baking tray.
  14. Roll the mixture into balls with your hands and place on the tray.
  15. You should make approx 26 balls.
  16. Lightly coat each ball with a small amount of oil using a pastry brush.
  17. Bake for 20-30min or until lightly browned and crunchy on the outside.
