Avocado, Chocolate & Oat Cookies

  1. 2 tablespoons ground flax seeds
  2. 2 tablespoons filtered water
  3. 1 large ripe avocado
  4. 3 tablespoons coconut oil
  5. ½ cup coconut sugar
  6. 2/3 cup cocoa powder
  7. 1 ¼ cups oat flour
  8. 1 teaspoon baking powder
  9. 1 teaspoon vanilla extract
  10. ¼ cup plant milk
  11. oil to spray baking sheet
  1. Pre-heat your oven to 180degC.
  2. Mix the ground flax seeds with the water in a small bowl and set aside to thicken.
  3. Remove the flesh from the avocado and cream this together with the coconut oil and sugar with your electric beaters or in your food processor.
  4. Add all the remaining ingredients, including the flax and water mix, to the bowl and combine well.
  5. Using two teaspoons spoon the mixtures out onto a baking sheet you have lightly sprayed with oil.
  6. Bake for 15 minutes at 180degC.
  7. Allow to cool for 5 minutes before transferring to a wire rack.
  8. Store in an airtight container.
